Kenapa dinamakan Triple Choc Bun? Sebabnya.... ada 3 penggunaan coklat didalam penghasilan bun ni. Serbuk koko dan choc chips didalamnya serta choc chips yg ditabur diatas tu. Haa... kan triple tu.. Sebenarnya resipi yg digunakan adalah resipi Basic Sweet Dough by Mamafami yg sentiasa K.Nor gunakan dln membuat roti. Cuma diberi touch up sket dlm bahan2 tu. Mulanya plan nak letak water roux dlm bahan2 tp dek kerana lupa nak buat awal2 water roux jadi tak jadi la letak. Cuma letak bread softener jer. Gluten tu pun K.Nor skip sbb tak ada stok kat rumah dan sememangnya tak pernah letak sbb tak pernah beli pun :) Sori ya Ma, Nor touch up sket kat resipi ni utk menghasilkan bun coklat. Dan mintak izin nak letak resipi tu kat sini ya..

SWEET DOUGH

Ingredients :
400g high protein flour/bread flour
6g salt
15g milk powder (not infant formula)
4g bread improver ~ tak letak
5g gluten ~ tak letak tp gantikan dgn 1 sk bread softener
80g sugar
11g instant yeast
60g eggs (without the shells) ~ k.nor letak sebiji telur
190g water
30g butter
30g shortening
Method :
1. Sift flour, salt, milk powder, bread improver and gluten into a mixing bowl.
2. Add in sugar, yeast and eggs. On the mixer on low speed.
3. Pour in 1/3 of the liquid.
4. Add in butter and shortening.
5. Pour the balance liquid a little at a time and continue kneading till a smooth and elastic dough is formed.
6. Leave to rest for 10 minutes.
7. Divide the dough into 40g balls.
8. Shape the dough.
9. Sprinkle some water on top of the shaped buns. Cover with a clean plastic bag and leave to prove till double the size.
Ini penambahan yg K.Nor buat bila buat bun coklat ni :-
gula ditambah menjadi (30gm) 110gm ~ sebab letak serbuk koko, roti akan terasa sedikit pahit/tawar so kena la tambah sukatan gula. (terpulang kalau nak lebih manis boleh lebihkan lagi)
2 1/2 sudu besar serbuk koko
3/4 cawan choc chips ~ utk dimasukkan dlm doh
sedikit choc chips utk ditabur atas doh sebelum dibakar

10. Bake in a preheated oven at 220 C for 10 to 15 minutes. Temperature may vary according to your oven.
