ASSALAMUALAIKUM...
Kukis review terakhir utk kali ni. Dah lama K.Nor mengidam nak buat biscotti. Bila tengok kat blog Gert yg mana Gert pernah tayang biscotti dulu org kata mmg duk terbayang jer nak buat. Pastu mula la congok2 dlm fikiran nak buat utk dijadikan kukis raya. Awal2 bulan puasa K.Nor dah pun beli almond utk menjalankan projek biscotti ni. Yer la, kena prepare awal2, kang dibuatnya almond kehabisan stok kat kedai, terlepas lak hajat nak menbiscotti kan..
Pastu bila tengok Nina Mirza tayang dia punya biscotti lagi la menggelodak jiwa nak menggodek tu kan. K.Nor biasanya buat kukis raya bila masuk minggu terakhir puasa, tu yg duk peram jer hajat nak membiscotti tu. Jadi bila mood mengukis dtg, biscotti ni la yg mula2 K.Nor buat. Mudah aje penyediaanya, cuma kena bakar sekali lagi doh yg dah siap dibakar dan dipotong tu. Tak la susah mana pun, cuma step jer lebih sket. Tapi tak jadi hal sbb hasilnya............ SANGAT2 SEDAP!! Memang syok abis melayan biscotti ni tambah lagi bila kita dip dlm air kopi panas!! perghhhhhhhh.. tak sedar berkeping2 masuk mulut ..
Tapi kan.. K.Nor tak dapat nak hidangkan Almond Biscotti ni pada tetamu pasa raya aritu sbb K.Nor potong biscotti ni ikut saiz yg dinyatakan. Dan hasilnya biscotti ni agak tebal sket utk dimakan begitu aje spt kukis raya yg lain. Kalau makan gitu aje mmg boleh patah gigi, so K.Nor sarankan kalau nak buat sbg kukis raya, kena slice nipis2 mcm yg Nina Mirza buat tu. Yg K.Nor buat ni, mmg tak leh ngap gitu aje, wajib kena dip dlm air kopi/teh panas (ni warning awal2 ya.. kang kalau patah gigi tu, K.Nor tak bertanggungjawab tau hehe) Sapa2 yg ada lebihan badam yg tak abis masa buat kukis raya baru2 ni, jom la try ALMOND BISCOTTI ni.. Tapi disyorkan jgn bakar sampai keras doh bagi pembakaran kali pertama tu ya, nanti payah nak slice. Dan kalau nak slice kena guna pisau bergerigi tau, utk mudahkan kerja slicing..
Lepas ni K.Nor nak mencuba lagi satu dua resipi biscotti sbb K.Nor pun dah jatuh chintaaaaaa dgn ini biscotti. Bukan K.Nor sorang jer suka tau, Cik Abg, Along, Naim dan Aisyah pun suka. Time sahur K.Nor cuma makan biscotti ni 2 - 3 keping bersama segelas air kopi panas.. memang best! Kalau tea time tu, dating dgn cik abe di beranda sambil ngap biscotti bersama se mug kopi panas.. fuhhhh... nyamannnnnnn ^__^

ALMOND BISCOTTI

Ingredients:
2 cups of flour
1/4 tsp baking soda
1 cup sugar
1/8 tsp salt
2 eggs
1 tsp pure vanilla extract or ½ tsp almond extract
1 cup whole almonds - toasted
3/4 cup shelled pistacios ~ ni k.nor tambah
1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
2. Combined flour, salt and baking soda together. In your mixer whisk eggs and sugar until well combined. Add in flavoring.
3. Gradually add in the flour into the egg mixture until dough is form. Add in almonds and pistachios. With floured hands divide dough into half. On a lightly floured surface roll each half of dough into a log.
4. Transfer the logs to the prepared baking sheet, spacing the logs about 3 inches apart, and bake for 35-40 minutes, or until firm to the touch and lightly brown.
5. Remove from oven and let cool on a wire rack for about 10 minutes. Transfer logs to a cutting board and using a serrated knife slice log into 1/2 inch thick. Arrange evenly on baking sheet. Bake for 10 minutes, turn slices over, and bake another 10 minutes or until lightly brown and crispy. Remove from oven and let cool and store in an airtight container.
